THE INITIAL POINT IN OUR PASSION

In the blue agave landfill our journey begins. In this region of Jalisco, Weber Blue agave is cared and nourished. Destileria Orendain honors each fiber of this iconic plant, ensuring that only the best ones are used for each product.

Each bladed “coa” that chops the agave is a tribute to almost a century of tradition. Destileria Orendain doesn’t only grows agave, but accompanies then with generations of “jimadores” and their stories, guaranteeing that each “piña” that reaches our hands has the appropriate size and maturity.

COOKING

SLOW COOKING, ETERNAL FLAVOR

Air is impregnated with the smell of cooked agave, with it, centuries of history and heritage. Inside our brick ovens, every “piña” is summited to steam cooking, slow and steady to release the sweet essence of the agave, known as “mosto”, the soul of our tequilas.

GRINDING

THE HEART OF FLAVOR

In Destilería Orendain we honor the ancient practice of extraction using a roller mill system, where the cooked agave is carefully crumbled and squeezed five times to ensure the whole juice is obtained, the heart of our products.

FERMENTATION

THE MEETING OF FLAVOR

Fermentation awakens the magic. In this natural step of the process, every note and smell is linked to give life to a unique flavor experience. Inside the stainless steel tubs, the agave juices are met with endemic yeast, creating a fascinating transformation ritual

DISTILLATION

THE ART OF PERFECTING THE AGAVE SPIRIT

This process is divided en 2 essential stages. The first one (destruction) creates a liquid that contains 20% alcohol. Afterwards, a second distillation process (rectification), raches an alcohol near 55% volume, where our tequila reaches maximum purity and turns into Tequila Blanco, a symbol of quality and excellence. The triple distillation is one of our biggest successes, a signature emblem of our brand Ollitas

AGING

A JOURNEY THROUGH TIME AND EXCELLENCE

The time inside the barrels is fundamental to define the character of our tequilas. Since reposados, that spend from 2 to 11 months, añejos with 12 through 35 months, all the way to extra añejos, that spend over 36 months; each stage of this process develops its own deepness and complexity to the final taste

Every sharp “coa” that cuts a penca (a leaf) is a tribute to nearly a century of tradition. At Destilería Orendain, we harvest not just agaves, but also stories of generations of jimadores, ensuring that each “piña” (agave heart) that reaches our hands has the ideal size and maturity.

COOKING

The aroma of cooked agave fills the air, echoing centuries of tradition and heritage. In our masonry ovens, time-honored methods and quality craftsmanship unite in a careful process. Each agave piña is slowly and deliberately steam-cooked, releasing a sweet essence known as mosto—the very soul of our tequilas.

At Destilería Orendain, we honor the ancient practice of extraction using a roller mill system, where the cooked agave is delicately shredded and pressed five times to ensure the complete extraction of its juice, the heart of our tequilas.

Fermentation awakens the magic. In this natural stage of the process, each nuance and aroma intertwine to create a unique experience in every sip. In stainless steel vats, the agave juices meet our endemic yeasts, unleashing a fascinating ritual of transformation.

DISTILLATION

THE ART OF PERFECTING THE AGAVE SPIRIT

This process is divided into two essential stages: Shattering, the first distillation, produces a liquid with 20% alcohol. And Rectification, where Tequila reaches its maximum purity and becomes Tequila Blanco, achieving an alcohol level close to 55%. A symbol of quality and excellence. The triple distillation, a hallmark of our Ollitas brand is one of our greatest prides.

AGING

A JOURNEY TOWARDS EXCELLENCE OVER TIME

The aging time in barrels is crucial in defining the character of our tequilas. From Reposados, resting for 2 to 11 months, Añejos, that mature between 12 and 35 months, and Extra Añejos, which age for a minimum of 36 months. Each stage of aging adds its own depth and complexity to the final flavor.
